You are correct about the spy angle for Bourdain, in my opinion. Tonight on the Travel Channel they are showing the Washington DC No Reservations show where he goes to the spy museum. There’s an entire spy segment in this show, he learns how to do a “dead drop” from a former real spy. Also, there was an episode of No Reservations where he went to a retired spy community in Russia, like The Prisoner, only more depressing. “Vee teach you to beat lie detector” and everything. Bourdain didn’t even hide it. The DC episode is on at 10pm tonight eastern time and then they repeat it again at 1am.
